Make red, white and blueberry patriotic popsicles this 4th of July
Nothing cools down a hot sweaty kid running around with sparklers on the 4th of July than a popsicle! These colorful patriotic popsicles are so good, way healthier than what you find in the grocery store and easy to make!
You’ll want to make these treats at least a day ahead. That way all you need to do is whip them out of the freezer, unmold and serve when the kids are ready for a frozen snack!
Using white grape juice to make strawberry and blueberry purees adds just the right amount of sweetness to the fruit layers. Adding frozen yogurt in between adds a little tart making this snack super tasty! It is actually really good for the adults as well!
Fresh or frozen fruit can be used, although it seems a shame not to take advantage of fresh fruit while it’s in season. Either way, allow yourself enough time to freeze and assemble each layer, and make sure you’ve made plenty of shelf space in the freezer. And have lots of napkins on hand! These babies melt fast!
- 12 oz can frozen white grape juice concentrate
- 1 cup chopped strawberries
- 1 cup blueberries
- ¾ cup plain or vanilla yogurt
- 16 – 3 oz plastic cups
- transparent tape
- 16 food safe popsicle sticks
- Defrost the white grape juice concentrate at room temperature until it becomes liquid. Add ½ cup of the concentrate into a blender with chopped strawberries and blend into a fine puree. Then pour the liquid through a fine mesh sieve into a 2-cup measuring cup. Make sure to press the pulp to squeeze out any liquid and scrape the underside of the sieve to add the flavorful pulp that made its way through. Add enough water to the fruit juice to bring the measurement to 2 cups then cover with plastic wrap and refrigerate.
- Rinse the blender pitcher and add an additional ½ cup of the concentrate as well as the blueberries. Puree the berries once again. Strain the liquid in the same manner as before, add water to bring the measurement to 2 cups then cover with plastic and refrigerate.
- Place the remaining ½ cup of concentrate into a small bowl, add the yogurt plus ¾ cup of water then whisk until completely smooth—you’ll have 2 cups of this mixture as well. Cover with plastic and refrigerate.
- Before assembling the popsicles, place 16 plastic cups on a tray or in a cake pan. Before you go any further, make sure you have a level space in your freezer large enough to fit the tray. Begin making the popsicles by pouring 2 Tbsp of the strawberry mixture into each cup and placing them in the freezer to harden for several hours. (You should use up every drop of the mixture.)
- After the first layer has frozen solid, remove the cups from the freezer and place a piece of transparent tape across the top of each cup directly over the center of the opening. Use a paring knife to cut a small slit in the tape exactly in the center—this is where the stick will be inserted. If this process has taken you a while and the popsicles start to melt, return them to the freezer to solidify before moving forward.
- Once the first layer has frozen solid, pour 2 Tbsp of the yogurt liquid into each cup then insert a stick through the hole in the transparent tape—be sure the sticks are standing perfectly upright. Return the popsicles to the freezer until the second layer is frozen solid.
- Once the second layer is frozen, remove the tape that was securing the sticks and pour 2 Tbsp of the blueberry mixture into each cup. Freeze until completely solid then remove the cups by warming them slightly with your hand or running them under warm water for 2 seconds. They should pull right off. Serve and enjoy!
