raspberry granitas
Crafted from nothing more than fresh fruit, lemon juice and simple syrup, frozen granitas are Italy’s delicious alternative to the more traditionally creamy sorbet.
What You’ll Need
Serves 4-6
- 3 1/2 cups fresh raspberries
- 1 cup cold simple syrup (buy pre-made or dissolve 1 cup sugar or granulated Splenda in 1 cup boiling water and strain any sediment)
- Juice of 1-2 lemons
- Strainer
- Shallow dish
- Fresh mint for garnish (optional)
Let’s Do It
- Puree 3 cups of fresh raspberries (reserve the rest for garnish) and simple syrup in a food processor or blender
- Add additional syrup and lemon juice to taste
- Strain mixture for seeds (or leave them in for a more rustic flavor), and pour into a shallow dish
- Freeze until mostly firm, approximately 2 hours
- Remove and stir with large fork to break up crystals and re-mix ingredients
- Return to freezer until ready to serve
